Park Hyatt Dubai’s much-loved Asado Nights are still burning bright, bringing the timeless spirit of Argentinian grilling to life — with a contemporary twist.

Led by Argentinian Chef Rodrigo Llanes, the new edition, relaunched in November 2024, reintroduced the rich traditions of Asado with a dynamic omakase-style twist. Set against the backdrop of Dubai Creek, this reimagined experience invites guests to gather around a 360-degree open kitchen, where every course is prepared in real time and served directly by the chef and his team.

Chef Rodrigo, whose background includes Michelin-starred kitchens across Europe, brings both technical mastery and cultural authenticity to the table. His updated approach honours the essence of traditional Argentinian grilling while embracing a modern, curated style of service rarely seen in Dubai’s dining scene.

 

The Menu: Fire, Flavour, and Finesse
The journey begins with Bocaditos — small, flavour-packed starters such as Empanadas de Osso Bucco al Malbec and Wagyu Picaña Tartare topped with Oscietra caviar. Seasonal salads like the Charcoal Roasted Beetroot with ash goat cheese and raspberry vinegar balance boldness with delicacy.

For the main event, the Desposte section celebrates meat in all its glory. From slow-grilled lamb racks and truffle-butter baby chicken to a showcase of Wagyu cuts, every dish is finished over open flame and served as it’s ready. Seafood features too — including whole seabass, tuna, and salmon paired with housemade refrito.

Sides like Humita and wood-fired vegetables round out the experience with deep, rustic notes.

Desserts stay close to Latin roots, with dishes like Volcán de Dulce de Leche — a warm centrepiece paired with Madagascan vanilla ice cream — and roasted pineapple served with mascarpone cream and blood orange granita.
